The texture analyzer, was used to compress these samples with a 2500 Newton load cell and a 100mm diameter compression platen.
The compression process involved compressing the samples to a height of 15 mm at a speed of 400 mm/min. This method helped measure the peak force encountered during the test, providing accurate data on the hardness and sliceability of the pepperoni. These objective measurements were crucial for understanding the product's suitability for slicing and identifying potential issues early on.
